FRED® Pear Tart

Ingredients for the dough
  • 200 g flour
  • 50 g ground almonds
  • 100 g cold butter
  • 1 pck vanilla sugar
  • 1 egg
  • 1 pinch of salt
  • some flour and butter for you form

  • 2 FRED® pears
  • 1/2 L milk
  • 1 pack vanilla pudding powder
  • 2 tablespoons sugar
  • 30 g marzipan
  • 4 cl amaretto
  • powdered sugar for sprinkling

Preparation (1/2)
For the dough, knead the ingredients into a smooth shortcrust pastry. Wrap the dough in plastic foil and chill for 20 minutes.

Preheat the oven to 175°C. Roll out the shortcrust pastry and place it in the greased and floured spring form with a diameter of 30cm and press the edges lightly.

Preparation (2/2)
Peel, quarter, core and cut FRED® pears into thin wedges. Prepare the vanilla pudding with the sugar as described on the package and stir until it has cooled down. When it is almost cold, stir in the amaretto. Then pour the pudding on the tart base, spread it and crumble the marzipan over it. Now arrange the pear slices in a ring on top.

Bake on the bottom rack for 50 minutes until golden brown. When the tart has cooled, sprinkle with powdered sugar. It goes well with vanilla ice cream.

FRED® Almond Tartlets​

Ingredients
  • 120 g ground almonds
  • 95 g chopped almonds
  • 2 egg whites
  • 55 g fine cane sugar
  • 1 FRED® pear
  • 1 tablespoon maple syrup

Preparation (1/3)
For the almond tartlets, mix almonds, chopped almonds, egg whites and sugar well.

Divide the mixture into 4 equal portions and spread each into a circle (10 cm Ø) on a baking tray lined with baking paper. Bake the tartes in a hot oven at 180°C for about 10 minutes.

Preparation (2/3)
For the pears in maple syrup, cut the fruit in half lengthways and remove the core. Cut each half in half again, then cut each quarter lengthways into 5 slices, leaving about 1 cm at the end of the stem.

Preparation (3/3)
Arrange the pear quarters in a fan shape. Place a quarter of a pear on each baked tartlet. Brush the pears with a little maple syrup. Bake the tartlets in the oven at the same temperature for about 15min until the edges are crisp.

To serve, brush the pears with the remaining maple syrup and serve with vanilla ice cream.

FRED® Power-Smoothie​

Ingredients (for 2 servings)
  • 1 FRED® pear
  • 1/2 banana
  • 1 lime
  • 4 leaves mint
  • 2 tablespoons chia seeds
  • 1 cm ginger
  • 50 g raspberries
  • 50 g strawberries
  • 50 g blueberries
  • Rice drink
  • Honey according to taste

Preparation
Wash the FRED® pear, cut it into small pieces with the core and put it into the blender. Peel and chop the banana, squeeze the lime and add. Scrape off the skin of the ginger and chop it. Now add the ginger, the washed mint, the chia seeds and the frozen berries and cover with the rice drink. Sweeten to taste and then blend.

If the smoothie is too thick, simply add a little water.

Lillet - Winter Thyme with FRED®

Ingredients
  • 5 cl FRED® pear puree
  • 5 cl Lillet Blanc
  • 5 cl tonic water
  • 2 cl cinnamon syrup
  • 3 cl fresh lemon juice
  • FRED® pear slice and thymian for decoration

Preperation
Peel a FRED® pear, remove the core. Cut ¾ of the pear into small pieces, place in a pot and simmer with 2 tablespoons of water on the stove for about 3min. In the end blend it and let it cool off. Cut the remaining quarter of the pear into thin slices and set aside for garnish. Fill a glass with ice and pour in all ingredients (except the tonic water). Finally, top with tonic water and garnish.

Pair with: Goat cheese
